Large Kebab Skewers (metal, bamboo, wooden skewers – soak in cold water for an hour then put the paneer and veggies to it)

Ingredients:

Paneer and mixing ingredients to make marinade

  • 500 gm paneer cut in big cubes (soak in warm water for 5 min. & drain it)
  • 2 bell peppers cut in large square pieces
  • 2 red onions petals
  • 75 g yoghurt
  • ½ tsp. black pepper grounded
  • 2 tsp. lemon juice
  • ¼ tsp. black salt
  • ½ tsp. garam masala powder
  • ½ tsp. kasoori methi
  • 1 tsp. cumin seed powder
  • 2 cardamom pods (grounded seeds)
  • ¼ tsp. turmeric powder
  • 2 tbsp. gram flour
  • ½ tsp. Kashmiri red mirchi powder
  • 1 tsp. paprika smoked (optional)
  • 2 large garlic cloves crushed
  • Grated ginger – 2 cm
  • Vegetable or sunflower oil – 2 tbsp.

Serve:

Sliced onions and tomatoes

Fresh coriander leaves chopped

1 tbsp. ghee applied over the cooked tikka

Instructions:

Marinating preparation:

Lightly roast gram flour in dry pan. Keep aside.

Mix together all ingredients with roasted gram flour for the marinade except oil.

Heat oil until extremely hot. Mix it into the marinade carefully. Add vegetables and paneer with onion petals. Keep aside for 30 min. to marinate properly. This can be covered and refrigerated until 2 days.

Cooking method:

Preheat the oven to 200-degree C. Put veggies, onions and paneer on the skewer, one after the other.

Put a metal wire rack on the baking tray and keep the skewers on top. Bake it for 10 min.

Optional:

An optional step is to hold each skewer and roll over direct flame once out of the oven. As it will be burning hot, be careful and it will emit smoke so keep the windows open.

Apply ghee over the paneer tikka pieces. Serve hot to relish the meal best.
