Gujarati food is a culinary delight, known since Ancient India. It is a culinary treasure! It is high on nutrition content. Farsans, pickles, chutneys are peculiarities of the region. Gujarati cuisine uses good amount of sugar, along with tomatoes and lemon. Food is adapted as per the climate and crop of the region. As this region has hot and dry climate throughout the year, these ingredients keep the body hydrated.
Diversity of region & taste
Recipes of Gujarati delicacies differ as per different regions. The state is essentially divided in 4 parts. North Gujarat, South Gujarat, Kathiawad and Kutch. The climate rules the food people eat. North Gujarat is famous for Farsans (Snacks) Khaman, Khandvi, Samosa, Dhokla, Kachori, Dahi Vada etc. In South Gujarat, every delicacy is cooked with green chillies. Paunkh and Undhiyu are famous in this region. Kathiawad has excessive use of spices. Sev Tameta Shaak, Lasaniya Bataka etc. are Kathiawadi specialties. Thepla served with pickle (sweet and spicy) is staple food. In Kutch, people relish Khichdi, Kadhi, Bajri no rotlo etc.
